It’s cold, wet and grey outside and the ONLY answer on a day like this, is pancakes. Not your thin little whispy crepe thingies: thick, delicious, warm and fluffy American-style pancakes. They may not be exactly what the doctor ordered but Shrove Tuesday is a must, and as long as everything is in moderation, we say ‘go for it’.
INGREDIENTS
- 200g self raising flour
- 11/2 tsp baking powder
- 1 tbsp golden caster sugar
- 3 large eggs
- 25g melted butter (and a bit for cooking)
- 200ml milk
- A bit of veg oil for cooking
METHOD
1. Mix the flour, baking powder, golden caster sugar and a pinch of salt in a large bowl.
2. Make a well in the centre of the mixed ingredients and add the eggs, melted butter and milk.
3. Whisk it all together until smooth and pour into a jug.
4. Melt a bit of butter in a frying pan with 1tsp of veg oil and when the butter looks frothy, pour in helpings of the batter.
5. Make each one roughly 8cm across and space them out: they’ll spread a bit as they cook.
6. Give them a minute and then turn them over with a spatula: you’ll know its time when they start popping tiny bubbles.
7. Stack ‘em high and serve with whatever you want – sliced fruit, syrup, bacon …. go wild!
