ISOBEL'S YUMMY BREAKFAST GRANOLA

We’re getting into Dangerous Territory now.  August is birthday month at L&F with one husband and both sons requiring cake and presents on the 5th, 10th and 25th – as you read this, we will all five of us be at home celebrating with Mr I.  His one request was for Isobel’s Granola at breakfast, and that made us think that we couldn’t in all conscience deprive you of her recipe any longer.  I know – we’re noble beyond measure.  So here it is, and you owe it to yourself to try it.  If picky Mr I loves it, we know for a fact that you will too.

 

INGREDIENTS 

- 2 tbsp vegetable oil

- 125ml maple syrup

- 2 tbsp honey

- 300g rolled oats

- 50g sunflower seeds

- 4tbsp sesame seeds 

- 50g pumpkin seeds

- 100g flaked almonds

- 100g dried berries

 

METHOD

1) Heat oven to 150C/fan

2) Mix the oil, maple syrup, honey and vanilla in a large bowl. Tip in all the remaining ingredients, except the dried fruit and coconut, and mix well.

3) Tip the granola onto two baking sheets and spread evenly. Bake for 15 mins, then mix in the coconut and dried fruit, and bake for 10-15 mins more.

4) Remove and scrape onto a flat tray to cool. Serve with cold milk or yogurt.

5) Enjoy and have more!

 

(The granola can be stored in an airtight container for up to a month.)
