Yes, they’re essential, and yes we will continue to do everything we can to encourage them, but these are masonry bees and recent building works have revealed what we estimate to be about 12 feet of honeycomb in the walls of the dining room.The builders scooped out 5kg of it and slung it in an old rubble bag into the skip.I instantly recovered it, and rendered it in the Aga overnight into 4kg of slightly gritty honey.Three stages of filtration (through a sieve, a mesh and then some muslin) and lo!We have delicious, grit-free Humby Honey.Bringing the wilds home in more ways than one – and for better or worse, we know there’s a lot more where that came from!
